Item Acceptability of Organoleptic Properties of Melon and Soya Beans Soup Blends Produced with Indian Spinach(Published by ASIAN REGIONAL ASSOCIATION FOR HOME ECONOMICS, 2017) Babayeju, A.A; Nmom, I.O; Obalowu, M.A; Adebisi, T.T; Gbadebo, C.T; Kolade, IfeoluwaABSTRACT T he study investigated the acceptability of organoleptic properties of and consumption of melon (egusi) and soya bean soup blends produced with vegetable (Indian spinach) which was observed to be poorly accepted in consumption. The aim of this study was to analyze the organoleptic properties and the consumption level of melon and soya beans soup blends produced with Indian spinach. Descriptive research design and sensory evaluation was used. The study population comprised three hundred and fifty students from 100-500 level with a sample size of 40 respondents were randomly selected from each level. Panelist used ratios of melon and soya beans 20:80, 40:60, 60:40, 100:0 50:50, and 80:20 for the sensory evaluation and the result was analyzed using 9-point hedonic scale. A well-structured questionnaire was also used to assess the level of acceptability and consumption of soya bean; the results were statistical analyzed using mean, standard deviation and ANOVA and tested at 0.05 significant level. The findings revealed that the control, melon 100% soup had the highest acceptability in terms of colour, aroma, texture and general acceptability. The finding shows that the use of melon and soya bean soup blend is acceptable up to 60% inclusion level. The result obtained shows that there are set back in the acceptability and consumption of soya beans with melon in Nigeria. Therefore, it is recommended that Indian spinach has the potential of improving meal if included in the soup. Soya beans products should be properly processed to avoid constipation and other side effect. Specifically, the study extracted dye from indigo leaves and compared it with synthetic indigo dye applied to the same texture of cotton fabric. Four objectives and two hypotheses were formulated and tested at 0.05 level of significant.. Experimental research design was adopted with a population of 150 dyers stratified with 20% to obtain a sample size of 30 dyers. The instrument was sensory score card accessed with 7 point hedonic scale. The data collected was based on appearance, colour brightness, texture, smell, length, finishing and overall acceptability. Data collected was analyzed with mean, standard deviation and t-test. The findings showed a significant difference between fabrics dyed with indigofera tinctoria solvent and synthetic indigo dye on cotton fabric. All results based on sensory score card were accepted. The study concluded that there was a wide range difference in the level of acceptability of onion skin and synthetic dye on fabric. It was recommended that the knowledge of indigenous dye should be added to the curriculum of textiles courses as these will broadens the knowledge of students in dyeing of fabric with different plants, animals and minerals that produces dye for entrepreneurial development in Nigeria.Item CONSUMER ACCEPTABILITY AND PROXIMATE ANALYSIS OF SELECTED SNACKS PRODUCED WITH NATURAL SWEETENERS FOR CHILDREN AND CONSUMERS(Publication of Family and Consumer Sciences society of Nigeria, 2020-01) Gbadebo, C.T; Babayeju, A.A; Opaleke, D.O; Adefila, A.O; Oluwadare, A.AThe study investigated consumer acceptability and proximate analysis of selected snacks produced with selected natural sweeteners. Four (4) research questions were raised and one (1) hypothesis was tested. The research design adopted for this study is Research and Development Design (R&D). Judges evaluated 8 coded samples produced for appearance, aroma, texture, taste and overall acceptability. Sensory Evaluation was judged on a 7 point hedonic scale ranging from“1”which indicates “Dislike” to “7” which indicates “Like’’ extremely using sensory evaluation score card (SESC). Proximate analysis was determined by calculating the nutrient content (Moisture, Protein, Ash, Fat, Crude fibre, and Carbohydrate). One way Analysis of Variance (ANOVA) was used to test for the significant differences in the nutrient and sensory properties of the samples. Result of sensory properties revealed that sample CHS (Chinchin with 100% sugar) was the most preferred in appearance, aroma, taste and overall acceptability (6.47±0.90). Result of nutritive composition showed that sample CHH (Chinchin with 100% Honey) has the highest protein (10.52%), fat (20.45%) and fiber (2.55%) contents. Results revealed a significant difference (P<0.05) in the sensory evaluation of snacks produced with sugar only and those produced with selected natural sweeteners. The study concludes that snacks produced with natural sweeteners are nutritive for all classes of people. The study focused on Home Economics Students from Tai Solarin University, Ijegun, Ijebu – Ode and Home and Hotel Management Students of Olabisi Onabanjo University, Yewa Campus, Ayetoro respectively. Two null hypotheses were formulated and tested at 0.05 level of significance. The study was a quasi-experimental at research which employed the pre-test, post-test control group design. The population was made up of three hundred (300) level Home Economics Students in 2014/2015 session and 138 samples were purposively selected. They are grouped into two experimental and control groups: Students from Tai Solarin University (69) and the Control group students from Olabisi Onabanjo University (69). The two groups were subjected to post – test for two weeks. Questionnaire and Evaluation Instrument for practical were used. The data collected were analyzed using Mean, Standard Deviation and Analysis of Covariance (ANCOVA). The F value results of the study revealed that the two null hypotheses were rejected. Findings showed that respondents from control group had better skill acquisition competencies compared to the experimental group. It also revealed that there was a significant difference in the performance of respondents from middle, low and high socio-economic backgrounds. In conclusion, it is very important to expose students to food practical for skill acquisition.Item The efficiency of Traditional Food Processing Technology in the Locality(Published by Faculty of Agriculture, University of Ilorin. Nigeria, 2012) Ode, M.O.; Babayeju, A.A; Obalowu, M.AThis paper identified the efficiency of traditional food processing technology which is the set of methods and techniques used for transforming raw food ingredients into food or other forms for consumption by human or animals either in the home or by the food processing industry. Food processing has also helped to create quick, nutritious meals to give to busy families for consumption. Some of the benefits include toxin removal, preservation, easing marketing and distribution tasks and increasing food consistency. It also increases seasonal availability of many foods which enables transportation of delicate perishable food across long distances and makes different kinds of foods safe to eat by activating spoilage and pathogenic micro-organisms. It is recommended that processed food will free people from the large amount of time involved in preparing and cooking “natural” unprocessed foods. Cost reduction, hygiene, and efficiency are necessary in food processing technology. The traditional efficiency of processed food may have slight effects on its nutritional density for example vitamin C which is destroyed by heat especially in canned foods. Also cost reduction, hygiene, and efficiency are necessary in food processing technology.Item Global Warming: Causes, Effects, and Control Measures(Association for the Promotion of Education, Health, Environment and Technology Research,(APREHET) University of Benin, Benin, Edo State, 2012-12) Gbadebo, C.T,; Babayeju, A.A; Uko-Aviomoh, E.E.Abstract Global warming which is an increase in the average temperature of the earth's atmosphere, especially a sustained increase that causes climatic change, happens when greenhouse gases (carbon dioxide, water vapor, nitrous oxide, and methane) trap heat and light from the sun in the earth's atmosphere, which increases the temperature of the earth's surface. This increase in tropped heat, changes the climate and alters weather patterns, which may hasten species extinction, influence the length of seasons, and lead to more frequent and severe storms and increase in the range of disease vectors. This paper explores Global Warming: Causes, Effects, and Control Measures. It discusses causes of global warming, the physica, ecological, social and economic effect of global warming on the environment, food supply and health of citizens. It focuses on the Nigerian situation concerning global warming and highlighted some control measures that can be applied to limit or eradicate global warming. The researcher is of the opinion that everyone in the society should put up conscious effort to find lasting solution to global warming, as it is believed that developing an aggressive plan of action can help reduce its negative impact. The following recommendations were made among others. There should be a change in peoples lifestyle to minimize the amount of green house gasses emitted into the air through application of measures such as a forestation reduced deforestation, carpooling, walking, use of fuel efficient vehicles and aircrafts alongside mass transportation and non-motorised means of transport, discreet use of television, computer, light our recycling items, e.t.c and there should be awareness creation in the society by the government to remove or check global warming. Some couples experience domestic violence due to nagging, religious beliefs, culture, alcoholism and this sometimes run into problems and naturally couples are not meant to be abused. The study investigated influence of domestic violence on marital relationships among couples in Ilorin west LGA in Kwara State. Five (5) research questions were raised and two (2) hypotheses were formulated and tested at 0.05 levels of significances. Survey research design was adopted for the study. The total population was one thousand eight hundred and thirty three (1,833). The sample for the study comprised two hundred (200) respondents constituting approximately 11% of the population. Multistage sampling techniques was used to select sample for this study. 200 couples were selected at random from Ilorin west LGA, Kwara State. Domestic Violence and Marital Relationship Questionnaire (DVMRQ) is the instrument that was used for data collection for this study. Research questions 1-5 were analysed using frequencies, percentages, mean, standard deviation and cross tabulation. The Null Hypotheses formulated in the study were tested with inferential statistics such as t-test and pearson product moment correlation at 0-05 level of significance at which the hypotheses was rejected or accepted. The findings revealed that domestic violence significantly influence marital relationships among couples as they experience lack of peace in the home ( 3.17) 50% , lack of unity in managing resources ( 3.01) 40.5%, lack of communication between partners ( 3.01) 42.5%, reduction in love for one another ( 2.96) 39%, deprivation of family needs ( 2.71) 27.5%. Result of the findings revealed that domestic violence significantly influence child upbringing as they experience intense anxiety, worries or new fears ( 2.76) 35.5%, become easily startled, jumpy or nervous ( 2.75) 38%, avoid spouses during violence ( 2.68) 31.5%, have repetitive talk or play about the violence ( 2.52) 27%, have problem going to sleep or being sleepy ( 2.50) 29.5%. The study concluded that domestic violence significantly influence marital relationships of couples as they experience lack of peace in the homes, lack of unity in managing resources, lack of communication between partners, reduction in love for one another, deprivation of family needs, can lead to aggressive sex against spouse. Couples should practice open communications to avoid problems. The study recommends that couples should develop trust and not being judgemental with each other in order to maintain stable relationship.Item Influence of Exploitative Child Labour Practices on Children’s Academic Performance in Ilorin West Local Government, Ilorin, Kwara State.(Published by Family and Consumer Sciences Society of Nigeria (FACSSON), 2021-03-17) Gbadebo, C.T.; Aladewolu, V.T; Adeniji, O.T.; Babayeju, A.A; Ameen, L.H; Oyegunwa, O.R; Salawu, S.AThis study assessed Influence of Exploitative Child labour on Children’s Academic Performance amidst global challenges in Ilorin metropolis. Five specific objectives, five research questions were formulated with one null hypotheses associated. Survey research design was adopted. The population for the study was 335 drawn from the three primary school in Ilorin West Local Government, Ilorin, Kwara State. A sample of 150 respondents from classes 4, 5, and 6 were randomly selected for the study. The instruments used for data collection were a self design questionnaire, and report cards. Frequency distribution and percentages were used to analyze the data obtained from the respondents. Result revealed that global challenges Influencing Involvement in Child Labour include – inability of parents to pay school fees, to assist parent, single parenting, because of family low income, polygamous and price hike of items. Result of research question three on level of child labour revealed 25 (16.7%) were never involved in exploitative child labour, 88(58.7%) were sometimes involved in exploitative child labour, while 37(24.7%) were always involved in exploitative child labour. Result of hypothesis was tested at 0.05 level of significance and was rejected (P<0.05). The findings, showed child labour affect pupil’s academic performance.It was revealed on the academic achievements by pupils exposed to labour were mostly females, compared to their male counterparts. The study recommended that parents should stop exploitative child labour and teachers should be educating the children about the effect of child labour. It also recommended that government/parents should develop strategies to reduce or eradicate child labour activities despite global challenges.Item Influence of Global Climate Change on Life Styles of Family Members in Ilorin South LGA of Kwara State(Published by the society for Home Economists in Nigeria(SHEN), 2020) Gbadebo, C.T.; Babayeju, A.A; Adeniji, O.T.; Oluwadare, A.A; Oyegunwa, O.RThis study examines the influence of global climate change on life styles of family members in IIorin South LGA Kwara State. Five research questions were raised and three hypotheses formulated and tested at 0.05 level of significance. Survey research design was adopted for the study. The population of the study comprised people from Ilorin South L.G.A, numbering 2,820. A total of 220 residents constituted the study sample. The instrument used was questionnaire tagged Global Climate Change Questionnaire (GCCQ) and was developed by the researchers based on the objectives and research questions formulated.. The instrument has reliability index of 0.74. Data collected were analyzed with descriptive statistics, percentages, frequencies, mean and standard deviation. The null hypotheses were analyzed using Pearson Product Moment Correlation (PPMC) and t-test.. The results revealed that family members in Ilorin South LGA are aware of Global Climate Change and agreed human activities causes global climate change. (¯x>2.50). The results further revealed that climate change significantly influence health and adaptive Behaviour of family members (p<0.05). The results revealed a significant difference between male and female on influence of Climate Change on Life Styles of family members (p<0.05). The study concludes that global climate change significantly influence lifestyles (health and adaptive Behaviour) of family members in Ilorin South LGA Kwara State. Based on the findings, it is recommended that the health sector should identify major regional health hazards caused by climate change and develop risk-lessening adaptations. Workshops, seminars and forums on climate change adaptation and mitigation should also be organized to raise awareness and promote climate change adaptation,Item Influence of Television Viewing on Academic Performance: A case study of senior secondary school students in Kaduna State.(Association for the Advancement of Education, Health, Environment, and Technology Research, University of Benin, Edo State., 2011-04) Gbadebo, C.T,; Babayeju, A.A; Obalowu, M.A;Abstract The purpose of this study was to investigate the Influence of Television on Academic Performance of Senior Secondary School Students in Zaria Educational Zone, Kaduna State. Descriptive research design using survey method was adopted. The population for the study was drawn from six (6) senior secondary schools in Zaria, Sabon Gari and Giwa Local Government Area in Zaria Educational Zone, Kaduna State, Nigeria. Three hundred and fifty (350) senior secondary school students were randomly selected using proportional sampling technique. The instruments used for the collection of data were the questionnaires, the students test and examination results for six (6) subjects. The hypothesis was tested in order to provide valid solution to the research question in the work. The data collected were statistically analyzed using Mann-Whitney Test one way Analysis of Variance (ANOVA), and two-tail t-test, at 0.05 significant level. This revealed the students who spent short time viewing television performed better in their examination mean scores than whose who spend longer time and non-users. This implied that the amount of time, spent on television had significant effect on academic performance of senior secondary school students. Recommendations were made based on the result.Item Influence of Walnut on the Nutritional and Physicochemical Properties of Biscuits made from Whole Wheat(Published by Faculty of Agriculture University of Ilorin, Nigeria AGROSEARCH, 2020-09-18) Dauda, A.O; Abiodun, A.O; Akintayo, O.A; Babayeju, A.A; Salami, K.O; Oyekanmi, I.An this study, the influence of walnut flour in biscuit production was studied. Biscuits were made from blends of whole wheat with walnut flours and were assessed for quality attributes and storability. Walnut was blended with whole-wheat thus: B (2%:98%); C (4%:96%); D (6%:94%); E (8%:92%) and F (10%:90%), while plain whole wheat flour served as control (Sample A). The biscuits were baked in the oven operated at 1800C for 20-30 minutes, cooled, packaged, stored for eight weeks, and analysed for physico chemical, microbial and sensory properties using standard methods. The results revealed that the proximate composition of the samples during storage were as follows:protein, moisture, ash, crude-fat, crude fibre and carbohydrate values ranged thus: (9.30-14.26%), (10.28-12.06%), (2.20-2.92%), (13.24-16.66%), (0.69-1.17%) and (53.60-61.47%) respectively, with better nutrient stability in the treated samples when compared to the control. The colour varied with increasing substitution, while the essential amino acids were higher in the walnut-supplemented samples. The microbial load of the control was higher than those of the treated samples, due to high antioxidant activity of walnut. Specifically, the study determined (1.) Factors that hindered student from studying Home economics programme in the University of Ilorin. (2). Motivating roles of Home economics that the students should know in the university of Ilorin. If answer two research questions and tested two hypothesis. The population was made up of all pre- BSc. Home economics students in the department of Home economics and Food science Faculty of Agriculture, University of Ilorin, Ilorin at the time of study. The sample for this study was drawn using purposive sampling technique. The instrument for the study was the study was a four-point scale questionnaire. The questionnaire was due validated and its reliability established prior to utilization. Copies of the instrument were administered on 242 subjects but 320 copies were retrieved, mean and t-test statistics was used for data analysis. The findings from the study includes 28 Factors that hinder students from studying Home economics in the University of Ilorin on 22 motivating roles of Home economics that the student should know in the University of Ilorin. Based on these findings, eight recommendation were made including 11 students should be taught the importance of Home Economics and career opportunities available to the subject. Parent should encourage their children to study Home Economics. They should also provide enough finance/resources for their children to study the subject among others.Item Production and Assessment of Quality Attributes of Zobo Drink Enriched with Date and Mango for Family Sustainability in Retirement(Published by Home Economics Professional Association of Nigeria (HEPAN)., 2022-06) Gbadebo, C.T.; Aladewolu, V.T; Adeniji, O.T.; Babayeju, A.A; Okunloye, R.O; Kareem, M.B; Salawu, S.AThe study assessed the quality attribute of Zobo drink enriched with Date and Mango. Four (4) research questions were raised and one (1) hypothesis formulated and tested @ 0.05 level of significance. Research and Development Design (R& D) was adopted. Judges were presented with four possible formulations of Zobo drink enrich with Date and Mango-ZO=100% Zobo Only, ZD=50% Zobo+ 50% Date, ZM=50% Zobo+ 50% Mango, ZDM=40% Zobo, + 30% Date + 30% Mango. Sensory Evaluation was judged using 7 point hedonic scale. Nutrient contents of the products were calculated to determine the proximate analysis. The result shows that the sample ZD=Zobo and Date was the most preferred in colour, taste and overall acceptability 6.35(±.62).. Findings of nutritional value revealed that Sample ZO=Zobo only has the highest protein (2.14%) and moisture content (92.55%) ZDM=Zobo, Date and Mango has the highest fibre, carbohydrate and ash content (1.30%). Findings of hypothesis revealed a significant difference in level of acceptability of Zobo drink enriched with Date and Mango in varying proportion (P<0.05). The study concludes that Zobo drink enriched with Date and Mango is suitable for consumption and therefore recommends that the drink should be encouraged as it increases opportunities for both young and old people to drink healthy vitality drink instead of the carbonated drinks. Retiree could start production of Zobo drink enriched with Date and Mango on a large scale for sale to increase their financial stability.Item Proximate Analysis and Sensory Evaluation of Yellow Maize-Based AadunFortified with Soybean Sweetened with Sugar(Published by Home Economics Research Association of Nigeria (HERAN), 2019-12) Babayeju, A.A; Gbadebo, C.T; Nmom, I.O; Kareem, M.B; Sheba, O.TThis study investigated proximate analysis and sensory evaluation of yellow maize-based Aadun fortified with soybean sweetened with sugar. Two objectives were raised and the products were in different percentages of 100% yellow maize used as the control, 90% yellow maize and 10% soybean, 80% yellow maize and 20% soybean, 60% yellow maize and 40% soybean, 50% yellow maize and 50% soybean, 40% yellow maize and 60% soybean with the addition of sugar (47gm), dried pepper (8gm), and palm oil (174gm) at constant rate using (AOAC 2005) method. Nine-point hedonic scale by 20 respondents was used and tested with ANOVA. The result of proximate composition showed ranged for moisture as 9.08% to 9.87%, 4.24% to 5.48% for ash, 18.74% to 19.55% for fat, 2.71% to 3.41% for fiber, 9.75% to 22.26% for protein and 41.25% to 53.76% for carbohydrate. The result of the sensory evaluation showed that sample ASS3 was the most preferred. In conclusion Aadun fortified with soybean and sweetened with sugar can be produce successfully. Specifically, the study determined the (1) regular uses of soya beans in the menu of households in Oju LGA of Benue State, (2) accessibility of soya beans to households in Oju LGA of Benue State, (3) nutritional value/benefits of soya beans (4) different uses of soya beans in the diet. It answers three research questions and tested three hypotheses. The population was made up of all literate and illiterate home-makers. Simple random sampling technique was used to select 240 homemakers from the population. The in-strument for the study was structured questionnaire. The questionnaire was dully validated and the reliability established prior to utilization. Copies of the instrument was administered on 240 subjects, filled and were re-retrieved. Means and t-test were used for data analysis. The findings from this study includes; (1) five (5) regular us-age of soya beans, (2) five accessibility of soya beans, (3) five (5) nutritional values of soya beans and five awareness in the uses of soya beans. Descriptive research design and sensory evaluation was used. The study population comprised three hundred and fifty students from 100-500 level with a sample size of 40 respondents that were randomly selected from each level. Ratios of melon and soya beans 20:80, 40: 60, 60: 40, 100:0 50:50, and 80:20 was used for the sensory evaluation .The samples were given to the panelist and the results were analyzed using 9-point hedonic scale. A well-structured questionnaire was also used to assess the level of acceptability and consumption of the soups; the data were statistically analyzed using Analysis of variance (ANOVA) at (p<0.05) level. The findings revealed that the control, melon 100% soup had the highest acceptability in terms of colour, aroma, texture and general acceptability. The use of melon and soya bean soup blend is acceptable up to 60% inclusion level. The result obtained shows that there are no setbacks in the acceptability and consumption of melon-soybean soup with Indian spinach vegetables in Nigeria. Three research questions and two null hypotheses were formulated and tested. The study employed a descriptive research design that questionnaire was used to solicit information from the respondents. The total population of youths was 324235(100%), 0.5% (162) youths were purposively sampled for the study. The reliability co-efficient of the instrument was 0.859. The instrument was collected on the spot of distribution to avoid misplacement and mutilation. The data was analyzed using simple statistics such as frequency counts, percentages and mean for research questions while chi-square was used to analyze research hypotheses formulated and tested at 0.05 level of significance. The findings showed that majority of the respondents had formal education, unemployed and are Muslims. In addition, majority of them earned ₦27,000 – ₦30,000 (USD 75 – USD 84) monthly. Also, the grand mean scores of articles that quilting, applique and patchwork techniques can be used for are above 1.50 decision rule of 3-Likert scale while the measure of factors that enhanced the production are above 3.00. Furthermore, there was no significant relationship among the production of quilting, applique and patchwork techniques and entrepreneurial development among youths as empowerment skills. Conclusively, the findings showed that the problems of unemployment facing youths can be resolved by utilizing these techniques for soft furnishing production. Among the recommendations stated are: there should be more awareness of its utilization and creations of more markets for salesthrough; sensitization, seminars, workshops and trade fares.
