Item Assessment of Anthropometric Status and Dietary Pattern of Pregnant Women in Ilorin South Local Government Area of Kwara State, Nigerian.(Home Economics Council of Nigeria (HECON)., 2015-02) Karim, O.R .; Osang, M.R.; Gbadebo, C.T.,Abstract This study examines the anthropometric status and dietary pattern of pregnant women in Ilorin South Local Government Area of Kwara state. The proportionate sampling technique was used to select one hundred respondents. A descriptive survey method was adopted using a four point Likert type questionnaire. Dietary data were obtained by means of a daily/weekly recall questionnaire (D/W/RQ). Each subject was required to report on all the foods consumed daily/weekly. Four objectives and four research questions guided the study with one hypothesis formulated. Data were statistically analyzed using percentages, mean score and standard deviation, while Pearson Product Moment Correlation Coefficient (PMCC) was used to test the formulated hypothesis at 0.05 level of significance. The result revealed that 47.92% pregnant women were mostly between 5 and 5.5ft tall, while, 46.88% weighed 61 to 70kg; 62.5% of them took fruits and vegetables regularly. The result further revealed that the respondents understood what nutrition and balance diet meant, were able to access balanced diet and monitored their nutritional status during pregnancy. It was also discovered that poverty has effect on ability to access adequate nutrition during pregnancy, which may be responsible for their irregular meals with 2.45 as the criterion mean. Result of PMCC revealed a significant (p<0.05) positive correlation between nutritional knowledge and dietary pattern (r= 326, p<0.05). Socioeconomic status also had significant correlation on the dietary pattern of respondents,(r=0.842, p<0.05). While, anthropometric status was positively correlated to dietary pattern (r=0.326; p<0.05). The study therefore, concludes that nutrition knowledge is an input to and foundation for better dietary pattern and anthropometric status of pregnant women. It was recommended that government should implement mechanisms to help provide adequate nutrition for pregnant women.Item Influence of Maternal Education on Nutritional Status of Pre-School Children in Ilorin West Local Government Area, Kwara State. University of Benin, Benin, Edo State, 2015) Gbadebo, C.T.,; Abraham, M.O; Adebayo, B.AAbstract The study investigated the influence of maternal education on nutritional status of pre-school children (0-5years old) in Ilorin West Local Government Area of Kwara State. Four research questions were raised and two research hypotheses were formulated and tested at 0.05 level of significance. Survey research design was adopted for the study. The population of the study comprised women (and their children) who have children aged 0-5years attending Cottage Hospital and Adewole Clinic and Maternity. A total of one hundred (100) women (Nursing parents) and their children constituted the study sample using random sampling technique. The instruments used were questionnaire tagged Maternal Education and Nutritional Status Questionnaire (MENSQ) and anthropometric measurement, height and weight were measured and compared with WHO standard values. The instrument had reliability index of .749. Data collected were analyzed using descriptive statistics such as frequencies, percentages, mean and standard deviation. The null hypothesis formulated for the study was tested using Pearson Product Moment Correlation. The results revealed that 40% of the children examined had low height for age 23% had a normal height for age while 37.0% had a high height for age. Also. 35.0% had a low weight for age 38.0% had a normal weight for age while 27.096 had a high weight for age. The findings revealed no significant relationship between the level of maternal education and nutritional status of pre-school children in the study area. It was concluded that maternal education does not influence the nutritional status of preschool children. Based on the findings of the study,recommendations proffered among others are that government should. endeavour to make provision for women empowerment as this might have significant influence on nutritional status, also more enlightenment programmes should be launched to create awareness n the importance of nutrition and dissemination of information regarding nutritional needs of pre-school children.Item Physicochemical properties of gari prepared from frozen cassava roots(Elsevier, 2018) Oyeyinka, S.A.,; Ajayi, O.I.,; Gbadebo, C.T.,; Kayode, R.M.O; Karim, O.R; Adeloye, A.A.ABSTRACT Gari is a fermented cassava products widely consumed in many parts of Africa including Nigeria. Cassava has a low shelf-life due to physiological and microbiological changes that occur after harvest. In this study, the physicochemical properties of gari produced from frozen cassava roots were investigated. Cassava roots were stored for a period of 0, 7, 14, 21 and 28 days. With the exception of gari yield (31.3–34.5%), freezing generally influenced the physiochemical properties of gari obtained from the cassava roots. Functional properties, including bulk densities and swelling power, decreased as the days of freezing increased. With the exception of pasting temperature(approx.64°C)and time to peak(approx.7min),other pasting properties were significantly affected by freezing. Cassava roots may be frozen for 28 days without significant changes in the sensory properties. Freezing may serve as a promising alternative for extending the shelf life of cassava root and the resulting roots may be used in the production of gari with satisfactory functionality and sensory attributes.
