Item Acceptability of Organoleptic Properties of Melon and Soya Beans Soup Blends Produced with Indian Spinach(Published by ASIAN REGIONAL ASSOCIATION FOR HOME ECONOMICS, 2017) Babayeju, A.A; Nmom, I.O; Obalowu, M.A; Adebisi, T.T; Gbadebo, C.T; Kolade, IfeoluwaABSTRACT T he study investigated the acceptability of organoleptic properties of and consumption of melon (egusi) and soya bean soup blends produced with vegetable (Indian spinach) which was observed to be poorly accepted in consumption. The aim of this study was to analyze the organoleptic properties and the consumption level of melon and soya beans soup blends produced with Indian spinach. Descriptive research design and sensory evaluation was used. The study population comprised three hundred and fifty students from 100-500 level with a sample size of 40 respondents were randomly selected from each level. Panelist used ratios of melon and soya beans 20:80, 40:60, 60:40, 100:0 50:50, and 80:20 for the sensory evaluation and the result was analyzed using 9-point hedonic scale. A well-structured questionnaire was also used to assess the level of acceptability and consumption of soya bean; the results were statistical analyzed using mean, standard deviation and ANOVA and tested at 0.05 significant level. The findings revealed that the control, melon 100% soup had the highest acceptability in terms of colour, aroma, texture and general acceptability. The finding shows that the use of melon and soya bean soup blend is acceptable up to 60% inclusion level. The result obtained shows that there are set back in the acceptability and consumption of soya beans with melon in Nigeria. Therefore, it is recommended that Indian spinach has the potential of improving meal if included in the soup. Soya beans products should be properly processed to avoid constipation and other side effect. Specifically, the study extracted dye from indigo leaves and compared it with synthetic indigo dye applied to the same texture of cotton fabric. Four objectives and two hypotheses were formulated and tested at 0.05 level of significant.. Experimental research design was adopted with a population of 150 dyers stratified with 20% to obtain a sample size of 30 dyers. The instrument was sensory score card accessed with 7 point hedonic scale. The data collected was based on appearance, colour brightness, texture, smell, length, finishing and overall acceptability. Data collected was analyzed with mean, standard deviation and t-test. The findings showed a significant difference between fabrics dyed with indigofera tinctoria solvent and synthetic indigo dye on cotton fabric. All results based on sensory score card were accepted. The study concluded that there was a wide range difference in the level of acceptability of onion skin and synthetic dye on fabric. It was recommended that the knowledge of indigenous dye should be added to the curriculum of textiles courses as these will broadens the knowledge of students in dyeing of fabric with different plants, animals and minerals that produces dye for entrepreneurial development in Nigeria.Item Effects of food practical on students’ skills acquisition in selected tertiary institutions, Ogun State, Nigeria(Published by Faculty of Agriculture University of Ilorin, Nigeria AGROSEARCH, 2016-03-10) Adebisi, T.T; Babayeju, A.A; Gbadebo, C.TThe study examined the effects of Food Practical on students’ skill acquisition in selected tertiary institutions in Ogun State. The study focused on Home Economics Students from Tai Solarin University, Ijegun, Ijebu – Ode and Home and Hotel Management Students of Olabisi Onabanjo University, Yewa Campus, Ayetoro respectively. Two null hypotheses were formulated and tested at 0.05 level of significance. The study was a quasi-experimental at research which employed the pre-test, post-test control group design. The population was made up of three hundred (300) level Home Economics Students in 2014/2015 session and 138 samples were purposively selected. They are grouped into two experimental and control groups: Students from Tai Solarin University (69) and the Control group students from Olabisi Onabanjo University (69). The two groups were subjected to post – test for two weeks. Questionnaire and Evaluation Instrument for practical were used. The data collected were analyzed using Mean, Standard Deviation and Analysis of Covariance (ANCOVA). The F value results of the study revealed that the two null hypotheses were rejected. Findings showed that respondents from control group had better skill acquisition competencies compared to the experimental group. It also revealed that there was a significant difference in the performance of respondents from middle, low and high socio-economic backgrounds. In conclusion, it is very important to expose students to food practical for skill acquisition.Item The Influence of Dietary Habit on Nutritional Status of Preschool Children in Ilorin-East LGA of Kwara State(Published by Home Economics Professional Association of Nigeria (HEPAN)., 2019) Gbadebo, C. T; Adebisi, T.T; Babayeju, A. A.; Iledare, J. JThe study investigates Influence of dietary habit on Nutritional Status of preschoolers (1-5 years olds) in Ilorin-East LGA of Kwara State. Three research questions were raised and Two hypotheses formulated and tested at 0.05 level of significance. Survey research design was adopted for the study and the population comprised of all mothers and preschoolers from under five (5) clinics randomly selected from four wards in Ilorin East Local Government Area of Kwara state. A multistage sampling technique was used in selecting a total of 100 respondents. The instruments used were Questionnaire tagged ‘Children’s Eating Behaviour Questionnaire’ (CEBQ), Food Frequency Questionnaire, and Anthropometric Measurement. The instrument had reliability index of 0.75. Data collected were analyzed with percentages, mean, standard deviation, Pearson product moment correlation (PPMC) and Analysis of variance (ANOVA). Findings reveals that 76 % children has very good food responsiveness (¯x=19.67), 82% of the children enjoy food very well (¯x=16.46), 69% has good Emotion over eating, eat more when emotional (¯x=12.32), while 61% are fair in Food fussiness(¯x=19.91) enjoys a wide variety of foods. Findings also revealed that dietary habits such as food responsiveness and food fusiness had significant influence on the nutritional status of the preschool children. (p<0.05). Result also shows that there is significant influence of mothers’ knowledge about nutrition on children’s dietary habits. (p<0.05). The study concludes that dietary habit of preschool childrens influences their nutritional status.. Three research questions and two null hypotheses were formulated and tested. The study employed a descriptive research design that questionnaire was used to solicit information from the respondents. The total population of youths was 324235(100%), 0.5% (162) youths were purposively sampled for the study. The reliability co-efficient of the instrument was 0.859. The instrument was collected on the spot of distribution to avoid misplacement and mutilation. The data was analyzed using simple statistics such as frequency counts, percentages and mean for research questions while chi-square was used to analyze research hypotheses formulated and tested at 0.05 level of significance. The findings showed that majority of the respondents had formal education, unemployed and are Muslims. In addition, majority of them earned ₦27,000 – ₦30,000 (USD 75 – USD 84) monthly. Also, the grand mean scores of articles that quilting, applique and patchwork techniques can be used for are above 1.50 decision rule of 3-Likert scale while the measure of factors that enhanced the production are above 3.00. Furthermore, there was no significant relationship among the production of quilting, applique and patchwork techniques and entrepreneurial development among youths as empowerment skills. Conclusively, the findings showed that the problems of unemployment facing youths can be resolved by utilizing these techniques for soft furnishing production. Among the recommendations stated are: there should be more awareness of its utilization and creations of more markets for salesthrough; sensitization, seminars, workshops and trade fares.
